OfflineSome of the more experienced bloggers will show a weeks worth of blogs, but you only see the latest one in its entirety. The older blogs of the week only show the Title, Date, and a few lines of the original blog (to tweak your interest) and then a symbol [...]. If you click on this symbol, it brings up the rest of the blog.
What is this process called and how is it achieved?

The feature you're referring to is called 'Excerpts.' For example, if you view the blog for this website, you will be seeing excerpts of all the articles and you need to click on the title of the article, or the link to read more, in order to read an entire article. If you click on our personal travel blog, you will see full articles.
How you accomplish this depends on the blogging system you're using. If you're using Blogger, here's my Blogger Tip: Display Excerpts rather than Full Posts. If you're using WordPress, here is the WordPress help on Excerpts.
A new feature of Blogger is called 'Dynamic Views' which take the excerpts concept to a new level.
